Rock ‘N Serve Enchiladas

1 & 1/2 lb. hamburger, cooked              1 lg. can refried beans

1 cup salsa                                  1 bag cheese (your choice)

15 Fajita size tortilla shells                 1 lg. can enchilada sauce (the Green sauce is best)

Mix refried beans, salsa and hamburger. Fill each shell with a large spoonful of the mixture. Roll up and sit in the Large Deep Rock-n-Serve. Top first layer with 1/3 of the enchilada sauce and 1/3 of the cheese. Repeat layers 2 more times. Top with remaining sauce and cheese. Seal and vent. Microwave on high 6-7 minutes. (If you do extra, extra cheese-9 min.) For variations use pre-cooked chicken or fajita steak strips. Adjust time to 9 minutes.

Mexican Salsa

1 medium onion (peeled and cut in half)                                      1 can diced tomato (15 oz)

1 Tbsp. Chef Series Southwest Chipotle Seasoning Blend               2 Tbsp. fresh cilantro (optional)

2 cloves garlic (peeled and smashed)                                                          Lime juice (1/2 lime)

Quarter onion: Chop in Quick Chef using blade. Add remaining ingredients; cover and turn handle until

desired consistency. Serve with Chips for dipping.

Duncan Hines Devils Food Cake Mix                   ½ stick Butter or Margarine

All ingredients required for the cake mix            6 Large Graham Crackers (crushed)

3 Tablespoons Milk=1/4 cup                             5 – 6 oz Milk Chocolate Chips ( 1/2 bag )=1 cup

Melt butter in bottom section of Tupperware’s Family-Size Microsteamer (about 30 seconds in the microwave). Sprinkle graham cracker crumbs evenly over melted butter. Mix up the cake mix according to the instructions on the box and pour into the Microsteamer. Cover with the lid. (Do not us the “center “ steamer section of the Microsteamer for this recipe.) Bake in the microwave on high power for 12 minutes, turning the container ½ turn after 6 minutes. This is not necessary if your microwave has a turntable. After baking for 12 minutes let the cake remain standing in the microwave for an additional 5 minutes before uncovering. Remove and invert the cake onto a plate or tray.

In the microwave, heat the chocolate chips for 40 seconds. Add milk and stir. The chips won’t have melted very much at this point. Return to the microwave and heat for an additional 30 to 40 seconds. Chocolate will be done when the ingredients are melted and can be stirred to a smooth consistency. Do not over cook your chocolate chips or they will scorch and become grainy. Pour the mixture over the cake and enjoy.
